Friday Randomness - Cold Edition

Hey hey it’s Friday! 

I am back from my frigid trip to Hartford and it feels good to be home.  And now, here’s some Friday randomness…

- After my race on Saturday, I went through a couple different levels of soreness.  First it was my abs, then it was my bum and then, like three days later, my left calf started to hurt.  I also have a weird bruise on my let bicep where my iPod was strapped.  Sheesh.  Needless to say, with my trip this week, I took a nice week off from exercise.  Tomorrow I plan on going for a short run, just to keep up the momentum – you know, just in case I decide to run another 10K in the near future.  (I’m eyeing this one)

- I experienced sub-zero temperatures this week!  And I’m not just saying that, I really did.  When I left for the office on Tuesday morning it was negative 2.  I was pretty warm because I had on a really good coat, a hat and gloves, but my face was cold.  My face actually hurt.  Ugh.  Glad I don’t have to experience that often.

And the snow!  There were feet upon feet of snow on the ground, piled up from previous snowfalls in the last few weeks.  I have never seen that before in Hartford.  It was pretty, but it was a little crazy.

- I flew Jet Blue on my way up to Hartford last Sunday.  You know I always always fly Southwest, but I flew Jet Blue for a couple different reasons: A) The Southwest flights last Sunday were no good for my schedule; B) It was Oscar Sunday and I wanted to catch the red carpet shows and knew I could watch it on the Jet Blue TVs.  That part was great.  The part that was not so great – my flight at an hour and a half late.  I don’t know if I’m just extremely lucky, but I never experience flight delays with Southwest.  So literally every time I fly someone other than Southwest I experience delays and I always say to myself “never ever fly someone else again!!”  Lesson learned.  I actually flew Southwest home on Wednesday and it was a much better experience. 

- I am looking forward to a weekend of nothingness.  We have no plans until Sunday evening (a Disney dining outing) so I am planning on getting things done around the house – cleaning, organizing, etc.  I have been itching to get in my closet and just purge a bunch of stuff for weeks now, so that’s on the list.  As is working on our upstairs loft, which looks like a furniture/crap graveyard at this point.  How do three people accumulate so much stuff?!

According to Google, the average life expectancy for cats is 15 years, so this dude is definitely exercising his nine lives.

Disney Princess Enchanted 10K Race Recap

On Saturday morning I ran the Enchanted 10K, part of the Disney Princess Half Marathon weekend, and I surprised myself. 

After not training - heck, not running even once before the race - I was able to run a good portion of the race, which surprised the heck out of me.  Let’s start at the beginning…

I wasn’t really worried about not being able to finish this race because I knew I could eke out 6.2 miles without keeling over (13.1 miles, that would be another story).  But I was a little worried that I would have to walk a majority of it because I was so unprepared and hadn’t run in a really long time.  Yeah, I know, next time I will train, I promise. 

And the weather…  Let’s talk about how cold it was.  On Friday, the day before the race, we didn’t get out of the 40s.  That is insane cold for us Floridians.  The weather forecast on Saturday morning at 4:30am (the time I had to be out at Disney – yes really) said it was going to be 38 degrees.  I don’t even know how to dress normally in that sort of temperature, much less how to dress for a race.  So I was a smidge worried about that. 

ended up with an old long sleeved  Disney Half race shirt from 2008 underneath a long sleeved quarter zip hoodie with awesome thumb holes that I got at Costco (yes!).  Both shirts were kind of thin, but I didn’t want to get too hot, so I went with it.  Then I did long pants and compression socks (knee socks) to keep me warm on the bottom and I completed the look with a hat and gloves.  It was the most perfect combination.  I was warm before the race and during the race I wasn’t too hot, so I did good! 

I met up with Michele at 4am and we got in one car and made our way to Epcot, where the race began.  We got there at the perfect time, we had just enough time to park, visit the port-a-potty, take some pics and make our way to our corrals.  We even got to see Miss America talk a little bit. 

was in Corral C (?!?!).  I don’t know how I got lucky enough for that, usually I’m in the way way back because I’m so slow, but I lucked out.  It was the perfect corral for me too because everyone seemed to be going at my pace.  It was really great, I felt like I was surrounded by people just like me, which was really motivating throughout the race.  Kumbayah! 

Anyway, the race began, I turned up my iPod super loud (like to a point where I think I might have lost some of my hearing) and I went.  My plan was 90/90 intervals – walk 90 seconds, run 90 seconds.  I crossed the start line running and when the beep went off telling me to walk, I didn’t want to.  I wanted to keep running, so I did.  I ended up running about 10 minutes (?!?!) before I settled into some intervals. But I didn’t stick with the 90/90, I did 3 minutes running and 90 seconds walking throughout most of the race.  Who am I?  I didn’t think I’d be able to run for a full minute, much less 3, so I was super excited about this.  I felt great!! 

The race course was a little boring for the first 3 miles.  It started in the Epcot parking lot, looped around the roadways around Epcot, then went in the backstage area of Epcot and then (finally) into Epcot’s World Showcase.  We entered in between Norway and China and ran around the world, exited near France and then ran around the Boardwalk, where Michele this picture of an awesome spectator slide.

At one point during the race a lady came up next to me and told me she was pacing me.  Really?  Normally I would have laughed because that’s ludicrous, but I was doing pretty good and felt great so I was like ‘THANK YOU!” and tried to stay close to her.  I actually never saw her again, I hope she was close behind me.

I felt great all the way until about mile 4.5 and then my legs started to get really tired, so I started to slow down and dropped my intervals to 90/90.  I couldn’t believe how tired my legs were!

The last half mile was around Epcot.  We ran in near Imagination, ran towards The Seas and then towards the ball and out to the parking lot.  I was so very tired and tried running but just couldn’t.  I had to save my energy for the final push to the finish line.  So I turned on my La Copa de la Vida, waited until the area where the spectators were, hoping they would provide motivation and started running.  Man, my legs have never been so tired!  I literally didn’t think I’d be able to run across the finish line.  But I did!  I crossed with a time of 1:30:19.  My goal – which I didn’t think I would actually hit because of my severe lack of training – was 1:30, so, hello, awesome! 

The whole race was such a wonderful, lovely surprise.  I can’t believe I did so well.  I had zero expectations for this race and I just feel like I killed it.  I felt great, I ran more than I thought I would, I just killed it.  So proud! 

So when’s the next one?!!?

Friday Randomness - Race Edition

Hi!  Happy Friday!  It's here again - the weekend!  And it's Princess Half Marathon/10K Weekend.  Woo!  

Here's some Friday randomness...

- So it's FRIGID here right now.  Highs today are only supposed to be in the 50s and overnight lows in the 30s.  This does not bode well for me tomorrow for the 10K considering the race begins in the middle of the night and ends before the sun comes up.  Brr...  Still trying to figure out how I am going to dress.  I am suddenly having flashbacks of that half marathon back in 2010 when it snowed/sleeted.

I was wearing a tank, a long sleeved wick away shirt, two hoodies, a hat, gloves and it was still frigid.  Brr...

- I made a fantastic playlist for the run tomorrow.  Even if the run sucks, at least I'll get a good hour and a half or so of jamming out to fab tunes.  

Some notes about my choices:

  • Born to Run by 7Lions is one of my favorite run songs because, duh, the title.  
  • Work B*tch by Britney is on there twice because it's a good kick you in the ass song.
  • Songs 18-22 are those "c'mon Kerry you can do it, you are strong" songs I need in the middle of a race.
  • Songs 24-27 are those "omigod you're almost done" songs.  Note the song Miracles, the lyrics are "I believe in miracles" - as in, it will be a miracle if I finish this race.  Ha.
  • And then of course my La Copa de la Vida as my final, cross the finish line song.  Always and forever.
Playlist making is an art that I take very seriously.  I'm a geek, I know.

- We went to the Expo last night at ESPN Wide World of Sports complex to pick up my race packet.  It was crazy, as always, but fun!

- As a celebratory dinner after the race we are going to Biergarten at the German pavilion at Epcot for a luscious German buffet.  I expect to eat lots of schnitzel and drink lots of German wine as a "yay to me" for my 10K triumph.  (because I already know it will be a triumph...yeah).  

- I leave for Connecticut on Sunday evening for a business trip.  Meh.  I hate traveling on Sundays.  Even more so when it's Oscar Sunday.  Thankfully I am flying Jet Blue so I can watch the Red Carpet coverage from the plane.  Woohoo!

Disney Dining Review: Akershus at the Norway Pavilion at Epcot

I'm falling behind again on my Disney dining recaps (shame on me!).

A couple of weeks ago we ventured out to Epcot to have dinner with princesses.  Really!  In Norway, the restaurant Akershus offers princess storybook dining for breakfast, lunch and dinner in a setting that very accurately makes you feel like you are eating in a castle.

See, I wasn't kidding.  

You enter the restaurant and are immediately greeted by a princess.  The night we went it was Belle.  We got to talk to Belle and then got our picture taken with her.  So cool.  I think if Jillian were a little older she would have been all about that.  But instead she was just like "oh hey" and played with her dress saying "YELLOW!" over and over.  So stinkin cute.  

After that we were shown to our table -  quite possibly the worst table in the restaurant.  It never fails, we always get crappy tables.  Remember the Disney Junior breakfast?  Anyway, we were seated like right next to the buffet line - good if you want to frequent the buffet (we didn't), bad if you don't like people milling around your dinner table.  Anyway...

The meal is a three course meal where you have the appetizer buffet, then you order your entree off the menu and then they bring a preset dessert assortment to your table.  Hubs and I didn't really know what Norwegian food was, but the menu items sounded pretty tasty. The appetizer buffet had a bunch of stuff we weren't really into, like smoked salmon and strange lunch meats, so we didn't really partake too much in that.  I'm sure it was good though.  For entrees, Hubs ordered the meatballs (like Swedish meatballs, but I guess they were technically Norwegian meatballs?) and I ordered the roasted chicken.

Before our entrees came, there was a princess processional around the restaurant where all of the princesses paraded around and waved.  It sounds dumb, but it was kind of magical and fun.  Obviously, look at my face in this picture...

And after that they made their way around the restaurant to meet and greet with each table.  We met Cinderella, 

Jillian:  "You know who you look like?"


Jillian: "I am going to rip that crown right off your head."

Jillian: "OMG you know Flounder?"

Jillian:  "Alright Dad, enough with the pictures."
It was really fun.  But again, I think Jillian needed to be a little older to truly understand and enjoy what it was all about.  We'll go back when she's like 4 or 5, I'm sure.  

The food was pretty good.  I don't think I would call myself a Norwegian food lover or anything, but my chicken was really good as were Hubs' meatballs.  Our only gripe was the price.  You pay a pretty penny to dine with princesses, I will just leave it at that.  Even with our Tables in Wonderland discount we were still like "whoa, wow, really?"  Oh well, I guess you're paying for the experience.

All in all, great night out!!

New Hair Wednesday

Hi there! After a couple of mornings of cardio inactivity (I did do my Pilates stuff so that's something), I saw this on my Insatgram and felt the need to get up and move this morning. 

Oh Shaun T, thank you! My workout this morning was excellent and it made me think "why have I been sleeping in all week and skipping this?" I'll never learn...
Hey guess what? I quit Diet Coke again! I started falling into that trap of drinking more Diet Coke than anything else and feeling really crappy, so I broke free again. I'm happy and don't really miss it at all. Helping with the transition: lots of water with ice.

I was so in need of a cut. And color. So I am a happy camper. Now I am chillin at home watching Jane the Virgin (is anyone else watching this?!  It's so good!) and working on my playlist for Saturday's run!

It's Race Week

Hello there!  I meant to check in sooner this morning, but that just didn’t happen. 

It’s Monday again, and I did not get my bootie out of bed to work out, and I’m a little ticked at myself for that.  I am blaming the weather.  We forgot to turn the heat on last night (because it was 72 and gorgeous yesterday), and when I woke up our house was frigid (it got into the upper 40s last night), so I was just too darn cozy to get out of bed.  Yes, that is a super lame excuse for not getting up and working out, but that is what I’m going with.  It’s a really bad week to not start on the right foot too, my 10K is on Saturday and I really need to get my butt moving, if ya know what I mean.

It’s race week!  The week leading up to a race is always kind of exciting.  Even if you haven’t run at all in like 3 months and pretty much know you’re going to crash and burn, there is still an element of excitement.  Yes, yes there is.  For example, I printed off my race waiver this morning for the expo on Thursday.  I love race expos, so I am really looking forward to that.  I need a new sparkly visor (because I lost my beloved one on vacation last year), so I am in the market for something sparkly and fun to go with my outfit.

The girls and I have decided that we are going to wear our Three Awesome Chicks shirts again. Yay, can’t wait!

Hopefully the shirt will give me the same super running powers it gave me during the Tower of Terror 10 miler a couple of years ago.  That was a great race – another one that I didn’t do a lick of training for, so my fingers (and toes) are crossed. 

Between now and Saturday I plan on running a time or two, just to make sure that I can do it.  I am just thanking my lucky stars that it’s only 6.2 miles and that I’m not running the half marathon.  I'm smart like that.

Tuscan Tortellini Soup

It's been a little chilly here this week, so on Tuesday night I decided to make soup.  I love soup, and after Sunday's dinner fiasco, I wanted to make something that didn't require the oven.  

My mom-in-law made this soup a couple of weeks ago and it was so delicious I had to try it myself.  She got it off of, where else, Pinterest!

Tuscan Tortellini Soup
(makes 6 servings)

1 Tb olive oil
1 lb Italian sausage
3 cloves of garlic (I used 1/4 tsp of garlic powder)
1 onion, diced
2 cups chicken stock
1 (28 oz) can of crushed tomatoes
1/2 tsp dried basil
1/2 tsp dried oregano
1/4 tsp crushed red pepper flakes
1 cup water
Kosher salt and black pepper to taste
1 (9 oz) package of refrigerated three cheese tortellini
1/3 cup heavy cream 
1/4 cup Parmesan

- Heat olive oil in large stockpot or Dutch oven over medium heat (I actually omitted this because the sausage was enough).  Add Italian sausage to the skillet and cook until browned, about 3-5 minutes.  Crumble the sausage as it cooks.  Drain excess fat and stir in garlic and onion.  Cook, stirring occasionally, until tender, about 3-4 minutes

- Whisk in chicken stock, crushed tomatoes, basil, oregano, red pepper flakes and 1 cup water, season with salt and pepper.  Bring to a boil and stir in tortellini.  Reduce heat and simmer until tortellini is cooked through, about 5-6 minutes.  

- Stir in heavy cream and Parmesan until well combined and heated through, about 2-3 minutes.

- Serve immediately, garnished with croutons.

The soup is spicy and thick and delicious.  Nom nom nom!

Disney Dining Review: Tony's Town Square at Magic Kingdom

A couple of weeks ago we made our way out to Magic Kingdom on a particularly cold, windy evening (it was like 50, I know, boohoo) for dinner reservations at a place that is near and dear to my heart – Tony’s Town Square on Main Street.  It’s near and dear to my heart because it’s where Hubs and I ate dinner the night we got engaged.

We didn’t get engaged at Tony’s, we got engaged during the fireworks in the Rose Garden by the castle.  So romantic, and perfect for Disney geeks like us.

Anyway…  We hadn’t been to Tony’s to eat since then (6+ years ago), so we decided to make our way back. 

Magic Kingdom was ridiculously crowded that particular night (and so cold), so we literally walked in the park, went to dinner and walked out.  But we had a great meal and an awesome parade experience along the way.

Disney Trivia:  Tony’s is actually the restaurant where Lady and Tramp share their spaghetti kiss in Lady and the Tramp. 


Tony’s is straight up Italian food and nothing else.  So we ordered spaghetti and meatballs and chicken parmigiana, because that’s what you do at Tony’s.  It was excellent.  And it came out ridiculously fast.  We literally sat down, had enough time to get Jillian situated with some snacks, they took our order, brought the (delicious focaccia) bread and two minutes later our food came out.  Talk about service!

We gobbled it up and finished just as the Main Street Electrical Parade was starting.  Normally this would have been an “aw crap, the parade, it’s going to be nuts getting out of here” moment (because we’re like that), but because we were patrons of Tony’s, we were able to sit out on the terrace overlooking Main Street and watch the parade from our private little area.  SCORE!  So my big tip of the day is, if you’re going to eat dinner at Tony’s time it with the parade so you can take advantage of this perk.  (that’s a good one, right?)

The parade was so fun.  Jillian had never seen it, so she enjoyed it and I enjoyed it because the Electrical Parade song is literally one of my favorite Disney songs ever. 

It was an awesome night out at Magic Kingdom!

It's a New Week

Hello there!  It took me all day, but I am finally getting around to saying hello here. I’m hoping to drop in a little more this week than last. 

- I am t-minus 11 days until the Disney Princess 10K and I can safely say no running has happened yet.  T25, yes, but running has been nonexistent.  I am really hoping that the crazy amounts of cardio and jumping from T25 have conditioned me appropriately.  We will see.  I’m planning on keeping it light at airy on race day doing 1:1 intervals.  We’ll see how that goes…

So serious.  I could see the finish line in this picture.  It's the look of determination.

In happier running days ... I am hoping for a run as successful as the Tower of Terror 10 Miler a couple of years ago (another one I didn't train for), hee.  I will be wearing my "Three Awesome Chicks" shirt again for good luck.

- So this happened last night while making dinner …

I was making dinner in a Pyrex dish in a 425 degree oven.  At the end of the cooking time, I switched on the broiler to brown it just a bit.  It was in the broiler maybe 3 minutes.  When I opened the oven and grabbed the Pyrex dish, it exploded in my hands.  Exploded.  As in shards of glass everywhere (thankfully not in my eye, my face, or anywhere else horrible).  Exploded.  Apparently you can’t put Pyrex in the broiler.  Duly noted, thank you.  Needless to say, Hubs and I spent hours cleaning up shards of glass and food from the floor, the oven, the cooktop, the counters, everywhere.  It is safe to assume that we now have the cleanest kitchen in the world.  Wow.  Crazy.

- This weekend we had a Disney dining date with Belle!

- I found one of my absolute favorite arm routines on You Tube this morning!  I used to love Exercise TV when it was offered for free with my cable and one of my favorites was a routine called “Tank Top Arms” with Cindy Whitmarsh.  It's so good!  And it’s on You Tube now!  Happy day!  I did it this morning after my T25 routine of the day – Alpha Ab Intervals.

Friday Randomness - Again

Hi there!  It’s Friday again?  How did I go a whole week without dropping in to say hello?  Actually, I sat down to write a couple of times this week and literally had nothing to say.  Like, I just sat at the keyboard like “what should I even talk about?”  So I just didn’t.  You’re welcome for that.

Since it’s Friday, that means some bullet point randomness – yay!

- Did anyone see the Saved By the Bell reunion on Jimmy Fallon?  OMG.  I am that girl who has seen every single episode of SBTB 100 times.  I know every episode, every storyline, everything.  So this was so up my alley.  I was giddy during the whole thing!  And hey, everyone still looks pretty close to what they looked like on the show – 20 something years ago.  (GAH!!!!)

- I am happy that the Sports Illustrated swimsuit issue is featuring plus-sized models.  I am not happy about the fact that they are calling this girl a plus-sized model.  What kind of world are we living in?!?

- Still riding the workout wagon!  Yes!  I’m doing really good too.  Every day I’ve done my T25 and my Perfect Bum, and I even started doing a Pilates mat workout routine that I found on You Tube.  It’s only 15 minutes and reminds me of the days where I used to go to Pilates mat class religiously.  I miss those days.

- I realized earlier this week that the Disney Princess 10K that I am running is two weeks from tomorrow.  Two weeks.  As in 14 days.  I have 14 days to start training.  How did I let myself get here again?  At least it’s only 6.2 miles, right?  If I can fake a half marathon without training, I can certainly get a 10K done.  But it will be ugly…  To psych myself up, I checked out the course map.  It helped a little.

If you're not a Disney geek like me, and can't decipher this map, the course starts in the Epcot parking lot, circles around the roadways around Epcot, goes into the backstage area of Epcot, goes around World Showcase, goes all around the Boardwalk and then back to the Epcot parking lot.  Fun!!   

Does anyone else agree that I just need to retire from running.  Or, wait, I think I already did that.  Hee.
